Porridge is a great healthy option for breakfast. It contains a bunch of vitamins and minerals including B vitamins and iron.

Make it even better for you by adding all the goodness of Tigernut flour and Goji Berries with my healthy porridge recipe.

Ingredients:

2tbsp on organic porridge oats

1 tbsp of Tigernut Flour

50 – 100 ml of tap water (filtered preferable)

½ tsp of Stevia Powder (optional, natural sweetener)

Handful of Goji Berries

Organic Coconut milk

Instructions:

Add the porridge oats and Tigernut Flour to a non-stick saucepan. Stir in 50ml of water so that oats and flour are thoroughly mixed together.

Simmer over medium heat, stirring until the mixture begins to thicken, add extra water to get your preferred consistency for porridge. If you like your porridge sweet add the Stevia Powder. Honey is a good alternative.

Remove from heat and stir in the Goji Berries. Allow it to cool slightly before pouring the porridge into a serving bowl. Pour on the coconut milk and enjoy this healthy porridge recipe.

Alternatively, the berries can be added after cooking to the top. Use any berries you like, blueberries or even dried fruit is great too.
